Preparation Steps
Step 1/7
Preheat the oven to 350°F (175°C). Line an 8 x 8-inch baking pan with parchment paper.
Step 2/7
Combine 1 cup all-purpose flour, 1/4 cup oatmeal mix, and 1/2 teaspoon baking powder in a medium mixing bowl.
Step 3/7
Mash 1 cup ripe banana in a large mixing bowl. Whisk in 1 large egg, 1/4 cup maple syrup, and 1 teaspoon vanilla extract until smooth.
Step 4/7
Add the flour mixture to the banana mixture. Fold gently with a rubber spatula until no dry flour remains.
Step 5/7
Spread the batter evenly in the lined baking pan. Sprinkle 3 tablespoons sliced almonds and 1 tablespoon granulated sugar over the top.
Step 6/7
Bake for 35 to 40 minutes. Remove when the top is golden and the center feels firm.
Step 7/7
Cool the baked slab completely on a cooling rack. Slice into 16 even bars with a knife.
