Preparation Steps

Peel the 2 purple sweet potatoes and cut them into small, even slices.

Steam the sweet potato slices over boiling water until completely tender, about 15 min.

Transfer the cooked sweet potatoes to a mixing bowl and mash them until mostly smooth.

Add 1 tablespoon granulated sugar and 30 ml sweetened condensed milk to the mash.

Mix the sweet potato filling until the sugar is evenly incorporated and the mixture is creamy.

Cut 120 g melting cheese into 8 long, thick sticks so it will melt well during frying.

Mix 10 g all-purpose flour with 10 ml water in a small bowl to make a thick sealing paste.

Place about 2 tablespoons of sweet potato filling in the center of 1 spring roll wrapper.

Brush the final wrapper edge with flour paste and press it closed to prevent leaking.
