Preparation Steps
Step 1/24
Place the 500 g pangasius fish cubes in a mixing bowl.
Step 2/24
Add 1 tsp red chili powder and 1 tsp coriander powder to the fish.
Step 3/24
Add 1/2 tsp garam masala and 1/4 tsp ajwain seeds.
Step 4/24
Add 1 tsp crushed cumin seeds and 1/2 tsp salt.
Step 5/24
Add 1/4 tsp yellow food coloring and 2 tbsp lemon juice.

Add 1 tbsp ginger garlic paste and mix until every fish cube is evenly coated.

Cover the bowl and marinate the fish for 30 minutes.

Heat 2 tbsp cooking oil in a pan over low heat.

Fry the marinated fish on low heat until cooked through and lightly browned, about 8 to 10 minutes.

Turn off the heat and place a lit charcoal piece in a small heatproof bowl inside the pan.

Cover the pan immediately for 2 minutes to smoke the fish, then remove the charcoal and set the fish aside.

Heat the remaining 1/4 cup cooking oil in a pot over medium heat.

Add 1 tsp mustard seeds and curry leaves, then let them sizzle for 30 seconds.

Add 1 tbsp ginger garlic paste and stir-fry for 30 seconds until fragrant.

Add the 3 chopped or puréed tomatoes and stir well.

Cook the tomatoes for 2 minutes over medium heat.

Add the remaining 1/2 tsp salt and 1/2 tsp crushed red chili.

Add 1/2 tsp white pepper and 1/2 tsp black pepper.

Add 1/2 tsp roasted crushed coriander seeds and 1/2 tsp roasted crushed cumin seeds.

Cook and stir until the tomatoes are soft and the oil begins to separate from the masala, about 5 minutes.

Add the smoked fish cubes and julienned fresh ginger to the tomato gravy.
Step 22/24
Add julienned green chilies and gently fold them through the curry.

Cover the pot and simmer for 2 minutes on low heat.
Step 24/24
Garnish with remaining ginger and green chilies, then serve hot.
