Preparation Steps
Step 1/10
Preheat the oven to 400°F (200°C). Slice 1/2 large baguette into crostini-sized rounds.
Step 2/10
Arrange the baguette slices in a single layer and toast until crisp and lightly golden, about 5 minutes.
Step 3/10
Add 3 cups fresh basil, 3 garlic cloves, 1/3 cup shelled pistachios, 1/2 cup grated Parmesan cheese, and the zest of 1/2 lemon to the food processor.
Step 4/10
Pulse the pesto ingredients until roughly broken down. Scrape down the sides with a spatula.
Step 5/10
With the food processor running on low, slowly drizzle in 1/2 cup extra virgin olive oil until the pesto is combined.
Step 6/10
Season the pistachio pesto with sea salt and cracked black pepper to taste. Pulse briefly to combine.
Step 7/10
Tear 1 to 2 burrata balls over the toasted baguette slices. Divide the burrata evenly among the crostini.
Step 8/10
Drizzle the burrata-topped crostini lightly with extra virgin olive oil. Season with cracked black pepper.
Step 9/10
Fold portions of the 200 g mortadella onto each crostini. Spoon pistachio pesto over the mortadella.
Step 10/10
Top each crostini with watercress. Serve immediately while the baguette remains crisp.
