    Grease 8 cavities of the deep muffin tin with a little of the unsalted butter, then dust them lightly with plain flour. Refrigerate the prepared tin.

    Beat the 100 g unsalted butter until soft and pliable. Add the 130 g full-fat cream cheese and beat briefly until evenly combined.

    Combine the 190 g plain flour, 1 tbsp caster sugar, and 1/4 tsp fine salt in a bowl. Mix the dry ingredients into the butter mixture quickly until a sticky dough forms.

    Transfer the dough onto cling film or parchment paper and press it into a flat disc. Wrap the disc and chill until completely cold and firm.

    Roll the chilled dough to a 4 to 5 mm thickness. Place it on a parchment-lined baking tray and refrigerate it again to keep the pastry firm.

    Cut 8 large 9 cm pastry circles and 8 small 4 cm pastry circles, re-rolling trimmings if necessary. Return all pastry discs to the refrigerator.

    Gently thin the edges of the 8 large pastry discs and press them evenly into the chilled muffin tin cavities. Leave a little pastry overhanging each rim.

    Divide 360 to 400 g mincemeat between the pastry cases, filling each one to the top. Keep the filled cases cold while working.

    Thin the edges of the small pastry discs and place one over each filled pie. Fold the overhanging bottom pastry over the lids to enclose the filling.

    Chill the assembled mince pies for 60 minutes until the pastry is firm. Preheat the oven to 180°C fan or 200°C conventional heat.

    Brush the top of each pie with the beaten egg. Pierce one small steam hole in the centre of every lid using a sharp knife.

    Sprinkle the pie tops with Demerara sugar. Bake until deep golden and the mincemeat is lightly bubbling at the edges.

    Run a palette knife around each warm mince pie to loosen it. Carefully lift the pies from the tin and serve warm or cool completely.
