Preparation Steps
Step 1/14
Finely chop 1 onion, 1 red bell pepper, and 1 fresh chili pepper for the fritter batter.

Combine 200 g cowpea flour and 1 tsp garlic powder in a mixing bowl.

Stir in the chopped onion, red bell pepper, and fresh chili pepper.

Gradually whisk in 300 ml water until a thick, scoopable batter forms.

Season the fritter batter with 1 tsp salt and 1 tsp black pepper.

Heat 1 l vegetable oil in a deep pan over medium-high heat until hot for frying.

Spoon portions of the cowpea batter into the hot oil, leaving space between each fritter.
