Preparation Steps
Step 1/13
Preheat the pellet grill to 185°F (85°C) with the Super Smoke setting enabled. Line the baking sheet with parchment paper.

Season the hanger steak evenly with sea salt and cracked black pepper. Insert the meat thermometer probe into the thickest part of the steak.

Smoke the seasoned hanger steak at 185°F (85°C) for about 60 minutes. Remove it when its internal temperature reaches 110°F (43°C).

Set the smoked steak aside to rest. Increase the pellet grill temperature to 350°F (175°C).

Melt 2 tablespoons of butter in one large skillet over medium heat. Add the thinly sliced Spanish onions and a pinch of sea salt.

Add the thyme leaves and minced garlic to the onions. Cook for 35 to 40 minutes, stirring regularly, until deeply golden and caramelized.

Arrange the baguette slices in a single layer on the prepared baking sheet. Brush each slice with the garlic butter.

Grill the buttered baguette slices at 350°F (175°C) until golden and crisp, about 6 to 8 minutes. Remove the toasted slices from the grill.

Heat the grapeseed oil in the second large skillet over medium-high heat. Add the smoked hanger steak and sear for 1 minute.

Flip the steak and add the remaining 2 tablespoons of butter. Baste and turn the steak until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the seared steak for 5 minutes. Slice it thinly against the grain into strips.

Top each toasted baguette slice with caramelized onions and a strip of steak. Sprinkle with blue cheese and minced chives.
Step 13/13
Squeeze lemon over the assembled crostini and drizzle with balsamic reduction if desired. Serve immediately while the toast is crisp and the steak is warm.
