Preparation Steps

Preheat the fan oven to 150°C (300°F). Line 1 baking tray with parchment paper if desired.

Toast 4 to 5 cardamom pods in a dry small saucepan over low heat for 1 to 2 minutes, until fragrant.

Remove the cardamom pod skins. Crush the toasted cardamom seeds using a mortar and pestle.

Crush 100 g pistachios into coarse pieces. Keep the pieces fairly chunky for texture.

Combine 400 g rolled oats, 70 g pumpkin seeds, 100 g sunflower seeds, 100 g linseeds, crushed pistachios, 150 g almonds, 150 g hazelnuts, and a big pinch of Maldon salt in a large mixing bowl.

Add 200 g maple syrup, 80 g honey, and 100 g coconut oil to a small saucepan. Warm gently until the coconut oil has melted.

Zest the 1 large orange and juice it. Stir the orange zest, orange juice, crushed cardamom, and 1 teaspoon mixed spices into the warm syrup mixture.

Pour the warm wet mixture over the dry oat and nut mixture. Stir thoroughly until every ingredient is evenly coated.

Spread the coated granola over the baking tray in one even single layer. Break up any very large clumps with the wooden spoon.

Bake the granola for 40 minutes at 150°C fan (300°F). Stir it every 10 minutes so it browns evenly.

Remove the tray when the granola is evenly golden and fragrant. Let it cool completely on the tray so it becomes crisp.

Serve the cooled granola, or transfer it to an airtight container. Store at room temperature for up to 1 month.
