Preparation Steps
Step 1/10
Wash the chicken and pat it dry. Halve the 3 tomatoes, chop the cilantro, and slice extra ginger for garnish.

Heat 4 tbsp ghee or cooking oil in a deep wok over medium-high heat.
Step 3/10
Add the 1 kg chicken and 1 tbsp salt. Add the green chilies and fry, stirring frequently, until the chicken is golden brown.

Add the crushed garlic and ginger. Sauté for a few seconds until fragrant.

Stir in the 1 tbsp coriander seeds and 1 tbsp cumin seeds. Mix until the chicken is evenly coated with the spices.

Add the halved tomatoes and cover the wok with a lid. Cook over medium-low heat until the tomatoes soften.

Remove the tomato skins and mash the softened tomatoes into the chicken. Cook over low heat for 10–15 minutes until a thick masala forms.

Increase the heat to high and cook for 4–5 minutes. Stir frequently until the sauce reduces and the oil begins to separate.

Add 1/2 tsp black pepper and 1/2 tsp garam masala. Mix and cook for 1–2 minutes.
Step 10/10
Garnish the Chicken Karahi with chopped cilantro and ginger slices. Serve hot with paratha, roti, or naan if desired.
