Preparation Steps
Step 1/16
Rinse 500 g basmati rice in cold water until the water runs mostly clear, then soak it in water for 20 to 30 minutes.
Step 2/16
Drain the soaked basmati rice thoroughly and set it aside while preparing the potato masala.
Step 3/16
Slice 2 onions, chop 2 tomatoes and coriander leaves, slit 3 green chilies, and cut 3 to 4 potatoes into medium cubes.

Heat 120 ml cooking oil in a large heavy pot over medium heat, then fry the sliced onions until light golden.

Add 1 tsp cumin seeds, 5 to 6 black peppercorns, 5 to 6 whole cloves, curry leaves, and 1 tbsp ginger garlic paste to the onions.

Fry the aromatics for 2 to 3 minutes, stirring continuously so the ginger garlic paste does not stick or burn.

Add the chopped tomatoes, green chilies, 1/2 tbsp chili powder, and 1/2 tbsp turmeric powder to the pot.

Splash in a little water and cook the tomato spice mixture covered over medium heat until softened and the oil rises to the surface.

Add the cubed potatoes and 1/2 cup water, then cover and cook over medium heat until the potatoes begin to soften.

Stir in 1 1/2 tbsp biryani masala, 1 chicken stock cube, and the chopped fresh coriander leaves.

Add the drained basmati rice to the potato mixture and gently fold it through without breaking the rice grains.
Step 12/16
Pour in the remaining water and add salt to taste, then stir once to distribute the seasoning evenly.
Step 13/16
Bring the liquid to a boil over high heat, then reduce the heat to medium and cover the pot.
Step 14/16
Cook covered until the water has evaporated and steam holes appear on the surface of the rice, about 12 to 15 minutes.
Step 15/16
Lower the heat to the minimum and steam the Tahiri covered for 10 to 15 minutes until the rice and potatoes are fully tender.
Step 16/16
Fluff the Tahiri gently with a wooden spoon and serve hot with raita, kachumber salad, or kebabs if desired.
