Preparation Steps
Step 1/11
Slice 1 onion and finely chop 2 green chilies. Blend 3 tomatoes into a smooth tomato paste.
Step 2/11
Heat 3 tbsp cooking oil in a wide pan over medium heat. Fry the sliced onion until golden brown.
Step 3/11
Add 500 g boneless meat to the browned onion. Cook while stirring until the meat changes color and is lightly sealed.

Stir in the tomato paste and 1/2 tsp salt. Cook for 3 to 5 minutes until the tomatoes darken slightly.

Add 1/4 tsp ground turmeric, 1 tbsp ground coriander, 1 tbsp red chili powder, and 1 tsp ground cumin. Stir well to coat the meat.

Add 1/4 tsp garam masala and cook the masala over medium-low heat. Stir frequently until oil separates around the edges of the sauce.

Add the chopped green chilies and 2 tbsp Greek yogurt. Mix until the yogurt is fully incorporated into the masala.

Pour in 1 cup water and add 1 tsp curry powder. Stir the curry until the sauce is evenly combined.

Cover and simmer the curry over low heat until the meat is tender. Add a small splash of water if the sauce becomes too dry before the meat softens.

Stir in the remaining 2 tsp garam masala. Taste and adjust salt if needed.
Step 11/11
Garnish with fresh coriander leaves and additional green chili. Serve hot with rice or roti.
