Preparation Steps
Step 1/15
Roughly chop the onion, garlic, carrot, and mushrooms.
Step 2/15
Heat the cooking oil in a pot over medium heat.
Step 3/15
Fry the chopped vegetables for 5 to 8 minutes, stirring occasionally.
Step 4/15
Add the 2 tablespoons tomato paste and 2 tablespoons all-purpose flour.
Step 5/15
Stir the tomato paste and flour into the vegetables until evenly coated.
Step 6/15
Pour in the 1/4 cup red wine to deglaze the pot.
Step 7/15
Scrape the browned bits from the bottom of the pot as the wine reduces briefly.
Step 8/15
Add the 2 cups water, 1 tablespoon soy sauce, and 1 tablespoon mustard.
Step 9/15
Add the bay leaves, dried thyme, salt, black pepper, and a pinch of sugar.
Step 10/15
Bring the mixture to a gentle simmer.
Step 11/15
Simmer the gravy for 10 to 15 minutes until the vegetables are very soft and the flavors develop.
Step 12/15
Place the fine-mesh sieve over a heatproof bowl.
Step 13/15
Strain the gravy through the sieve, pressing the cooked vegetables to extract the liquid.
Step 14/15
Return the strained gravy to the pot and heat it gently.
Step 15/15
Simmer briefly until the gravy thickens to the desired consistency, then serve warm.
