Preparation Steps
Step 1/18
Wash the basmati rice until the water runs mostly clear, then soak it in water for at least 20 minutes.
Step 2/18
Slice the onion and cube the potato into bite-size pieces.
Step 3/18
Blend the tomato with the small green chilli into a smooth paste.
Step 4/18
Heat 1 1/2 cups cooking oil in a large heavy pot over medium heat, then fry the sliced onion until deep golden brown.

Remove and reserve half of the fried onion for the final garnish.

Add the chicken pieces or beef pieces, ginger-garlic paste, black peppercorns, cumin seeds, green cardamom pods, cinnamon stick, bay leaf, and star anise to the pot.

Sauté the meat and whole spices for 5 minutes, stirring until the meat is lightly browned and fragrant.

Stir in red chilli powder and turmeric powder, then cook for 1 minute to bloom the spices.

Add the tomato and small green chilli paste, then cook until the paste darkens and oil begins separating at the edges.

Pour in 2 cups water and bring the gravy to a simmer.

Cover the pot and simmer until the chicken is tender, about 20 minutes; if using beef, simmer until tender, about 45 to 60 minutes.

Uncover the pot and cook the gravy while stirring until the oil separates visibly from the masala.

Add the green chilli, potato, and salt, then stir until the potato is coated with the masala.

Add the remaining 4 cups water and bring the liquid to a full boil.

Drain the soaked basmati rice and add it to the boiling gravy.

Cook uncovered over medium-high heat until most of the liquid has been absorbed and craters appear on the rice surface.

Cover the pot tightly and steam the rice on very low heat for 15 minutes.
Step 18/18
Garnish the akhni with reserved fried onion and fresh coriander before serving.
