Preparation Steps

Preheat the oven to 140°C (285°F) and place 8 paper liners in the muffin tray.

Combine the crushed digestive biscuits with 30 g melted butter until the crumbs are evenly moistened.

Divide the biscuit mixture between the 8 lined cups and press firmly into an even base.

Whisk 125 g cream cheese with 45 ml fresh cream until smooth and lump-free.

Whisk in the caster sugar, corn flour, sweetened condensed milk, and vanilla extract until fully combined.

Pour the cheesecake filling evenly over the biscuit bases, filling each cup nearly to the top.

Set the muffin tray inside a baking dish and pour hot water into the dish to create a water bath halfway up the tray.

Bake the cheesecake cups at 140°C (285°F) for 15 to 18 minutes, until the edges are set and the centers have a slight wobble.

Remove the cups from the water bath and cool completely before chilling until firm.
