Preparation Steps
Step 1/21
Pour the oat milk into the medium saucepan and heat over medium heat.

Stir 3 tablespoons of the granulated sugar into the warm oat milk until dissolved.

Bring the sweetened milk to a boil, then immediately remove the saucepan from the heat.

Stir 50 ml vegetable oil into the hot milk mixture.

Add the gluten-free plain flour and baking powder, then stir until the mixture forms a smooth dough ball.

Stir the ground ginger into the dough until evenly incorporated.

Transfer the warm dough into the piping bag fitted with the small star-shaped nozzle.

Combine the remaining granulated sugar with the ground cinnamon in the shallow bowl.

Mix the ground nutmeg into the cinnamon sugar until evenly blended.

Place two-thirds of the dark chocolate in the heatproof bowl over a pan of barely simmering water, without letting the bowl touch the water.

Stir the chocolate frequently until completely melted, then remove the bowl from the heat.

Add the remaining dark chocolate and stir until the dipping sauce is silky smooth.

Pour the vegetable oil for frying into the large deep heavy-based pan to a depth of 5 to 7 cm.

Heat the frying oil over high heat to 185 to 190ยฐC, checking it with the cooking thermometer.

Pipe 5 to 7 cm lengths of dough directly into the hot oil, frying only a few churros at a time.

Fry the churros for about 1 minute until golden underneath, then gently flip them.

Fry the second side until golden brown, then lift the churros from the oil with the slotted spoon or kitchen tongs.

Drain the fried churros on kitchen paper to remove excess oil.

Sprinkle the warm churros with the spiced sugar and toss until fully coated.

Repeat frying, draining, and coating until all of the dough has been cooked.

Serve the hot cinnamon-sugar churros with the silky melted dark chocolate for dipping.
