Preheat the oven to 200°C / 400°F.

Peel the 3 medium potatoes and slice them very thinly, ideally 1–2 mm thick.

Brush the baking tray with a small amount of the olive oil to prevent sticking.

Arrange the potato slices in overlapping layers on the oiled baking tray, forming a compact rectangular sheet.

Whisk 1 tbsp cornstarch with 1 tbsp olive oil and 2 tbsp water in a mixing bowl until smooth.

Stir the salt and 1/2 tsp paprika into the cornstarch mixture.

Brush the seasoned cornstarch mixture evenly over the layered potato slices.

Bake the potato sheet for 25–30 minutes until the edges are golden and the potatoes are tender.

Let the baked potato sheet cool briefly, then lift it carefully from the tray with a spatula.
Step 10/10
Add fillings of your choice to the potato sheet and fold or roll it into a wrap before serving.
