Preparation Steps
Step 1/14
Finely dice 1 onion and cut 130 g guanciale into small strips or cubes.
Step 2/14
Wash and dice 300 g mixed garden vegetables into bite-size pieces.
Step 3/14
Bring a large pot of generously salted water to a boil.
Step 4/14
Heat 2 tbsp extra-virgin olive oil in a large skillet over medium heat.

Cook the guanciale in the skillet until its fat renders and the pieces are crisp, about 5 minutes.

Add the diced onion and cook until softened, about 3 minutes.

Add the mixed garden vegetables and sauté until tender, about 7 minutes.

Pour in 200 ml tomato passata and simmer the sauce for 8 minutes.

Cook 400 g rigatoni in the boiling water until al dente, following the package time.

Reserve 120 ml pasta water, then drain the rigatoni in a colander.

Add the drained rigatoni to the vegetable and tomato sauce, then toss to coat.
Step 12/14
Stir in 250 g sheep's milk ricotta and loosen with reserved pasta water until creamy.

Season the pasta with salt and black pepper to taste.

Grate 100 g aged ricotta over the pasta and serve immediately.
