Preparation Steps
Step 1/7
Peel the 4 small carrots, then shred them with a box grater or slice them very thinly.
Step 2/7
Mince the 1-inch piece of fresh ginger, then roughly chop the handful of fresh cilantro.

Heat 1 tablespoon cooking oil in a skillet over medium heat, then sauté the minced fresh ginger, ground coriander, ground cumin, and mustard seeds for 3 minutes.

Add all prepared carrots to the skillet, then stir-fry over medium heat until softened but still slightly crisp, about 5 to 7 minutes.

Add 2 teaspoons sugar and 1 tablespoon lemon juice, then toss until the carrots are evenly coated.
