Preparation Steps
Step 1/9
Weigh 1.5 kg of pork loin or pork shoulder and trim only any thick, hard exterior fat.

Finely chop the rosemary, sage, garlic, and bay leaves to make the aromatic seasoning mixture.
Step 3/9
Combine the chopped aromatics with 30 g sweet paprika, 30 g smoked paprika, and 15 g black salt in a mixing bowl.

Rub the entire pork piece thoroughly with the prepared spice mixture, pressing it onto all surfaces.
Step 5/9
Preheat the pellet smoker to 110°C / 230°F and set it up for indirect smoking.
Step 6/9
Place the seasoned pork in the pellet smoker and smoke at 110°C / 230°F for 420 to 480 minutes.
Step 7/9
Check the pork temperature with a meat thermometer and continue cooking until it reaches about 93°C / 200°F and feels tender.
Step 8/9
Remove the smoked pork from the smoker and rest it for 20 minutes before handling.
Step 9/9
Pull the rested pork into thin shreds using two forks and mix the bark evenly through the meat.
