Preparation Steps

Preheat the oven to 180°C (356°F). Line one 7-inch round baking pan with parchment paper.

Place 125 g dark chocolate and 125 g butter in a heatproof bowl.

Add 15 g cocoa powder to the chocolate and butter.

Microwave the chocolate mixture in short bursts until melted. Stir with a silicone spatula until smooth, then set aside to cool slightly.

Put 200 g caster sugar, 120 g wheat flour, and 1/2 teaspoon baking powder into a mixing bowl.

Whisk the dry ingredients until evenly combined.

Add the melted chocolate mixture and 1 egg to the dry ingredients.

Add 1 teaspoon vanilla extract and stir until no dry flour remains.

Pour in 125 ml brewed coffee. Stir until the batter is smooth and glossy.

Pour the batter into the lined 7-inch baking pan. Smooth the surface with a silicone spatula.

Bake at 180°C (356°F) for 40 to 45 minutes. The centre should be set but remain moist for a fudgy crumb.

Cool the cake in the pan for about 15 minutes. Run a knife around the edge and transfer the cake to a cooling rack.

Pour about 115 g chocolate ganache over the cooled cake. Spread or allow it to drip over the top before slicing.
