Preparation Steps
Step 1/13
Thaw the jumbo shrimp according to the package directions. Pat the shrimp dry thoroughly with paper towels.

Cut the thawed jumbo shrimp into small, evenly sized cubes. Transfer the cubed shrimp to a mixing bowl.

Season the cubed shrimp with the pinch of salt. Toss until the shrimp is evenly coated.

Add the softened cream cheese, mayonnaise, sriracha, and soy sauce to the second mixing bowl. Stir until the sauce is smooth.

Pour the cream-cheese sauce over the seasoned shrimp. Mix until every shrimp cube is coated.

Rinse 1/2 cup dry rice until the water runs mostly clear. Cook the rice with a pinch of salt according to the appliance or package instructions.

Measure 1 cup of cooked jasmine rice and set it aside. Preheat the oven to 400°F (205°C).

Cut the 2 nori sheets into 6 equal squares, approximately 3.5 inches wide. Leave enough overhang for lifting each baked sushi cup from the muffin tin.

Place about 1 tablespoon of cooked jasmine rice in the center of each nori square. Press the rice flat to soften the nori.

Place one rice-topped nori square into each cup of the large muffin tin. Press each square gently into the cup while keeping the nori edges above the rim.

Spoon about 1 tablespoon of the shrimp mixture into each nori cup. Divide the mixture evenly among all 6 cups.

Bake the sushi cups at 400°F (205°C) for about 14 minutes. Broil for the final 1 minute until the shrimp topping is lightly crisped.

Remove the sushi bake cups from the oven and let them cool briefly. Drizzle with spicy mayonnaise and sprinkle with chives before serving.
