Measure the glutinous rice flour, granulated sugar, water, and salt.

Whisk 120 g glutinous rice flour, 100 g granulated sugar, 240 ml water, and 1 g salt until smooth.

Cover the mixture loosely with plastic wrap. Microwave it on high power for 1 minute.
Step 4/10
Stir the mochi dough thoroughly with a rubber spatula. Microwave it for 1 more minute on high power.

Stir the dough again until glossy and very sticky. Microwave it for a final 1 minute until translucent.
Step 6/10
Dust the work surface generously with 60 g cornstarch. Transfer the hot mochi dough onto the cornstarch.

Dust the dough with cornstarch and flatten it into a thick rectangle. Let it cool for 10 minutes until safe to handle.

Divide the cooled mochi dough into 8 equal pieces. Flatten each piece into a 9 cm round.
Step 9/10
Place about 19 g Nutella hazelnut cocoa spread in the center of each round. Pinch the edges closed to seal each mochi.
Step 10/10
Roll each mochi gently in the remaining cornstarch. Serve immediately or chill briefly before serving.
