Preparation Steps
Step 1/20
Preheat the pellet grill to 185°F (85°C) and activate the Super Smoke setting.
Step 2/20
Grate the onion on the box grater and mince 7 garlic cloves.
Step 3/20
Combine ground beef, grated onion, 4 minced garlic cloves, 2 tablespoons thyme leaves, egg, 1 1/2 teaspoons Worcestershire sauce, 1 tablespoon Dijon mustard, panko breadcrumbs, and 1/2 teaspoon sea salt in the large mixing bowl.
Step 4/20
Mix the meatball mixture thoroughly until evenly combined.
Step 5/20
Shape the mixture into approximately 24 golf ball-sized meatballs.
Step 6/20
Arrange the meatballs directly on the grill grates with space between them.
Step 7/20
Smoke the meatballs for 30 to 40 minutes, until lightly browned and smoky.
Step 8/20
Melt the butter in the large high-sided skillet over medium heat.
Step 9/20
Add sliced cremini mushrooms, 1 1/2 tablespoons thyme leaves, and 1/4 teaspoon sea salt to the melted butter.
Step 10/20
Cook the mushrooms for 8 to 10 minutes, stirring occasionally, until they release moisture and begin to brown.
Step 11/20
Add the remaining 3 minced garlic cloves and all-purpose flour to the browned mushrooms.
Step 12/20
Stir for 1 minute until the flour evenly coats the mushrooms and no dry flour remains.
Step 13/20
Pour in beef stock, 2 teaspoons Worcestershire sauce, 4 teaspoons Dijon mustard, and the remaining 1/4 teaspoon sea salt.
Step 14/20
Stir the gravy until smooth and bring it to a gentle simmer.
Step 15/20
Transfer the smoked meatballs into the simmering mushroom gravy.
Step 16/20
Simmer the meatballs in the gravy for about 10 minutes, until the gravy thickens and the meatballs reach 160°F (71°C) internally.
Step 17/20
Remove the skillet from the heat and stir in sour cream.
Step 18/20
Season the gravy with black pepper and adjust salt to taste.
Step 19/20
Divide cooked egg noodles among 6 serving bowls or plates.
Step 20/20
Spoon the meatballs and mushroom gravy over the noodles, then garnish with minced fresh chives.
