Preparation Steps
Step 1/14
Peel the white-fleshed sweet potato and cut it into 3 cm cubes.
Step 2/14
Peel and finely slice the red onion.
Step 3/14
Quarter the fresh figs and roughly chop the fresh coriander.
Step 4/14
Heat 1 tablespoon olive oil in the Dutch oven over medium-high heat.
Step 5/14
Brown the 700 g beef chuck in the hot oil for 5 to 7 minutes.
Step 6/14
Add the sliced red onion and cook for 4 minutes until softened.
Step 7/14
Season with half of the salt, black pepper, paprika, ras el hanout, and ground ginger.

Pour in 200 ml water and scrape the bottom of the Dutch oven.

Cover the Dutch oven and simmer the beef gently for 75 minutes.

Stir in the sweet potato cubes and the remaining half of the spices.

Add 1 tablespoon honey and stir until it dissolves into the braising liquid.

Cover and simmer for 25 minutes until the sweet potato is tender and the beef is fork-tender.

Fold in the fig quarters and cook uncovered for 5 minutes.

Sprinkle with chopped fresh coriander and serve the stew hot.
