Preparation Steps
Step 1/12
Preheat the conventional oven to 130°C / 266°F on conventional static heat. Place the 3 kg pork shoulder in the roasting pan.
Step 2/12
Combine 40 g sweet paprika, 40 g hot paprika, 20 g ground ginger, 50 g salt, 30 g ground black pepper, 40 g ground sage, and 40 g ground rosemary in the mixing bowl.
Step 3/12
Coat the pork shoulder with 120 g Dijon mustard. Rub the spice mixture evenly over the mustard-coated meat.
Step 4/12
Pour 750 ml beer into the roasting pan around the pork. Roast the pork uncovered at 130°C / 266°F for 240 min, until a firm dark crust forms.
Step 5/12
Transfer the pork shoulder and its cooking liquid to the baking tray. Cover the tray tightly with aluminum foil.
Step 6/12
Bake the covered pork at 130°C / 266°F for 180 min. Remove the tray from the oven.
Step 7/12
Keep the pork covered in the baking tray for 60 min. Reserve the cooking juices in the tray.
Step 8/12
Peel and thinly slice the 3 Tropea onions. Add the sliced onions to the saucepan.
Step 9/12
Add 50 g muscovado sugar and 0.5 g salt to the onions. Cook over low heat for about 30 min until very soft and caramelized.
Step 10/12
Blend the caramelized onions until smooth. Keep the onion cream warm.
Step 11/12
Shred the rested pork shoulder with 2 meat forks. Toss the pulled pork with enough reserved cooking juices to keep it moist.
Step 12/12
Serve the pulled pork with the caramelized Tropea onion cream. Use as a main dish or sandwich filling.
