Preparation Steps

Preheat the oven to 160°C fan (180°C conventional).
Step 2/12
Melt 80 g unsalted butter, then set it aside to cool slightly.
Step 3/12
Grease all 9 wells of the muffin tin with a little of the melted unsalted butter.
Step 4/12
Sift 100 g icing sugar and 50 g plain flour into the mixing bowl.
Step 5/12
Add 65 g ground pistachios, 65 g ground almonds, and 1 g salt to the bowl.

Whisk the dry ingredients until evenly combined.
Step 7/12
Pour the cooled melted unsalted butter and 120 g egg whites over the dry mixture.

Mix the batter until smooth and no dry pockets remain.
Step 9/12
Divide the batter evenly among the 9 prepared muffin-tin wells.
Step 10/12
Place 2 raspberries into each cake and scatter 20 g flaked almonds over the tops.
Step 11/12
Bake for 18 to 20 minutes until the cakes are risen, golden, and a skewer comes out clean.

Cool the mini cakes in the muffin tin before removing and serving.
