Preheat the oven to 350°F (175°C). Lightly butter a 9 x 13-inch casserole dish.

Thaw 20 oz frozen spinach in the microwave. Drain it in a colander without pressing it dry.
Step 3/10
Dice 1 yellow onion. Place it in a large mixing bowl with the thawed spinach.
Step 4/10
Crumble in 8 oz feta cheese. Add 1 teaspoon lemon zest, 1 egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Mix the filling until evenly combined. Set the spinach mixture aside.

Lay half of the 16 oz phyllo dough sheets in the casserole dish. Let the excess pastry hang over the edges.

Spread the spinach filling evenly over the phyllo. Cover it with the remaining phyllo dough sheets.

Fold the overhanging phyllo over the top. Pour 1/2 cup melted butter evenly over all of the pastry.

Cut the unbaked spanakopita into 8 portions with a knife. Let it stand for 5 minutes so the butter absorbs into the phyllo.

Bake for 40 to 45 minutes until the phyllo is deeply golden and crisp. Rest for 10 minutes before serving.
