Preparation Steps
Step 1/11
Preheat the oven to 180°C / 355°F and line the baking tray with a large sheet of parchment paper.

Finely grate the onion, keeping all of its juice, and grate 2 garlic cloves.

Add the 600 g ground beef or ground lamb, grated onion and garlic, cumin, smoked paprika, ground coriander, black pepper, salt, and 1 tablespoon olive oil to a mixing bowl.

Mix the meat mixture gently just until the seasonings are evenly distributed, without overworking the meat.

Place the meat mixture on the parchment paper and spread it into a thick, even rectangle.

Fold the parchment paper over the meat and lightly press it to compact the kebab into an even shape.

Bake the wrapped kebab for 35 to 40 minutes at 180°C / 355°F, until fully cooked through.

Open the parchment paper and grill the kebab for 5 minutes, until its surface is darkened and caramelized.

Combine 250 g Greek yogurt, lemon juice, 1 tablespoon olive oil, 1 grated garlic clove, salt, white pepper, and optional dill or mint in a second bowl.

Mix the yogurt sauce until smooth and refrigerate it for 15 minutes to develop its flavor.

Slice the cooked kebab thinly and serve it with the chilled garlic yogurt sauce.
