Preparation Steps

Place the chicken pieces in a pot with ginger-garlic paste, half of the salt, half of the black pepper, and enough water to cover. Boil until the chicken is fully cooked and tender, about 15 minutes.

Remove the cooked chicken from the pot and shred it finely with two forks. Let it drain briefly if it is wet.

Heat the cooking oil in a frying pan over medium heat. SautΓ© the shredded chicken with tikka masala seasoning for 3 to 4 minutes.

Transfer the seasoned chicken to a mixing bowl and let it cool for about 5 minutes. Stir in mayonnaise until the chicken mixture is creamy and spreadable.

Crack the eggs into a mixing bowl and whisk with the remaining salt and black pepper. Beat until the yolks and whites are fully combined.

Pour a thin layer of beaten egg into the frying pan over medium heat. Cook in 2 to 3 thin omelette batches until set, then remove and keep aside.

Slice the cucumber and tomato into thin, even rounds. Keep the sliced vegetables ready for assembling.

Spread butter lightly over one side of all six bread slices. Place three buttered slices on the cutting board for each sandwich.

Spread half of the chicken-mayonnaise mixture over the buttered side of one bread slice. Arrange half of the tomato slices over the chicken layer.

Place a second bread slice over the tomato layer. Add half of the thin omelette, half of the cucumber slices, and one cheese slice.

Top with a third bread slice and press the sandwich gently. Repeat the assembly process with the remaining ingredients for the second sandwich.

Brown both assembled sandwiches in a dry frying pan over medium-low heat. Flip carefully and toast both sides until golden and the cheese begins to soften.
