Preparation Steps
Step 1/13
Preheat the oven to 375°F (190°C).
Step 2/13
Add the frozen blueberries and granulated sugar to the medium non-stick pan.
Step 3/13
Cook the blueberries over medium heat for about 8 minutes, stirring until thick and jammy.
Step 4/13
Mash the overripe bananas and cream cheese together in the 8 x 11 inch baking dish.
Step 5/13
Add the milk, ground flaxseed, and vanilla extract to the banana mixture.
Step 6/13
Stir the mixture until combined. Let it stand for 5 minutes so the ground flaxseed thickens the mixture.
Step 7/13
Add the Oath Oats and baking powder to the baking dish.
Step 8/13
Stir until the oats are evenly moistened and the baking powder is distributed.
Step 9/13
Spoon the thick blueberry mixture over the oatmeal base.
Step 10/13
Dollop the Greek yogurt over the top and gently swirl it through the blueberry layer.
Step 11/13
Bake uncovered for 30 to 35 minutes, until the top is golden and the oatmeal is set.
Step 12/13
Remove the baked oatmeal from the oven and let it cool for 5 minutes.
Step 13/13
Cut the cooled baked oatmeal into 8 slices and serve.
