Preheat the oven to 200°C (400°F).

Brush 4 ramekins with 5 g butter for greasing.

Dust the greased ramekins with 8 g all-purpose flour for dusting; tap out any excess.

Melt 120 g white chocolate with 113 g butter in the double boiler until smooth.

Beat 2 eggs, 50 g granulated sugar, and 0.3 g salt until thick and pale yellow.

Add the melted white chocolate and butter mixture to the egg mixture. Mix until fully combined.

Add 15 ml red food coloring to the batter. Mix until the color is uniform.

Combine 38 g all-purpose flour, 10 g unsweetened cocoa powder, and a small pinch of salt in a bowl.

Gradually fold the flour mixture into the red chocolate batter. Stop mixing once no dry streaks remain.

Divide the batter evenly among the 4 prepared ramekins.

Bake the cakes for 14 to 16 minutes until the edges are firm and the centers remain soft.

Cool the lava cakes in their ramekins for 3 to 4 minutes.

Run a sharp knife around the inside edge of each ramekin. Invert each cake onto a serving plate.
