Preparation Steps
Step 1/23
Soak 500 g basmati rice in water for 30 minutes, then drain it.
Step 2/23
Bring a large pot of salted water to a boil with 1 tsp cumin seeds, 4 lemon wedges, and 2 green chilies.
Step 3/23
Boil the soaked basmati rice until about 80% cooked and still firm in the center, then drain thoroughly.

Heat 177 ml cooking oil in a heavy-bottomed pot over medium heat.
Step 5/23
Fry 2 sliced onions until deeply golden brown, then remove and reserve half of the fried onion for garnishing.

Add 500 g beef stew meat to the remaining fried onion and stir until the beef changes color.

Stir in 2½ tbsp ginger garlic paste and cook for 2 minutes.

Cover the pot and cook the beef over low heat for 5 minutes.

Add 2 diced tomatoes and stir them into the beef mixture.

Pour in 355 ml water and bring the beef mixture to a boil.

Cover and simmer over low heat for about 60 minutes, until the beef is fork-tender.

Add red chili powder, turmeric powder, coriander powder, biryani masala, Kashmiri red chili powder, salt, black peppercorns, star anise, black cardamom, green cardamom, cloves, cinnamon stick, and bay leaf.

Stir the spices into the beef gravy and cook for 2 to 3 minutes.

Add 120 ml plain yogurt, 45 ml lemon juice, and half the fresh coriander, then stir until combined.

Cook the beef gravy uncovered until the oil separates and the masala becomes thick.

Spread half of the boiled basmati rice in a clean heavy-bottomed pot.

Spoon all of the beef gravy masala evenly over the first rice layer.

Scatter the remaining fresh coriander and 2 tbsp fresh mint over the beef layer.

Cover the beef layer with the remaining boiled basmati rice.

Mix 2½ tbsp kewra water with ¼ tsp yellow food coloring in a small bowl.

Drizzle the colored kewra water evenly over the top rice layer.

Cover the biryani tightly and steam-cook over very low heat for 8 to 10 minutes.
Step 23/23
Garnish the biryani with reserved fried onion and serve hot with raita if desired.
