Preparation Steps

Fill the large pot with water and bring it to a rolling boil on the stovetop.

Season the boiling water with 1 tablespoon table salt and add the fusilli pasta.

Cook the fusilli until al dente, stirring occasionally, for 8 to 10 minutes or according to the package instructions.

Scoop out 1/2 cup pasta cooking water with the ladle and set it aside.

Drain the cooked fusilli in the colander and return it to the warm pot.

Add the cottage cheese, fresh basil leaves, grated Parmesan cheese, pine nuts, and garlic clove to the blender.

Add the extra-virgin olive oil, salt, and black pepper to the blender.

Blend the pesto ingredients until completely smooth and creamy. Stop once to scrape down the blender sides if needed.

Set the pot containing the drained fusilli over low heat and pour in all of the cottage cheese pesto sauce.

Toss the pasta gently with the sauce and add the reserved pasta cooking water a little at a time until silky and lightly coated.
