Preparation Steps

Add 240 g all-purpose flour and 50 g icing sugar to a mixing bowl, then combine them evenly.

Rub 100 g cold cubed unsalted butter into the flour mixture until it resembles wet sand.
Step 3/13
Add 45 ml cold milk and pinch the mixture together until a rough dough forms.

Flatten the dough into a disc and refrigerate it for 120 min.

Preheat the oven to 180°C and line a baking sheet with parchment paper.

Roll the chilled dough into a 30 cm round between two sheets of parchment paper.

Slice 3 peaches and 3 plums, then place the slices in a clean mixing bowl.

Toss the sliced fruit with 2.5 tbsp caster sugar and 1 tbsp lemon juice.

Transfer the rolled dough to the lined baking sheet and spread the fruit filling in the center, leaving a 5 cm border.

Fold the dough border over the fruit filling and press the overlapping edges to seal.

Brush the exposed pastry edges with 1 tbsp milk for brushing.
