Preparation Steps

Shred the 8 oz (227 g) extra sharp cheddar cheese; reserve half for the filling and half for the topping.

Combine the 3½ cups flour, 1½ cups warm water, 3 tablespoons olive oil, 1 tablespoon instant yeast, and 1 teaspoon salt in the large mixing bowl.

Stir the dough with the rubber spatula until no dry flour remains, scraping down the bowl sides as needed.

Gather the dough with clean hands and gently knead it just until it forms a smooth, neat ball.

Cover the bowl with the damp kitchen towel and let the dough rise at room temperature until doubled in volume, at least 60 min and up to 720 min.

Brush the 9 x 9-inch baking dish with the remaining 1 tablespoon olive oil, then transfer the risen dough into the dish.

Press the dough with your fingers until it reaches all edges of the baking dish, then cover it with the kitchen towel.
