Preparation Steps

Preheat the outdoor grill to medium-high heat, about 400°F (205°C).

Place the cast iron skillet on the hot grill and heat it for a few minutes.

Brush the 4 ears fresh corn with 1 tablespoon olive oil. Season the corn with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Add the seasoned corn to the hot cast iron skillet. Cook for 8 to 10 minutes, turning occasionally, until charred in spots.

Remove the charred corn from the skillet. Cut the kernels off the cobs on the cutting board.

Reduce the grill heat to medium, about 350°F (175°C). Add 8 ounces cream cheese and 1/2 cup plain Greek yogurt to the same skillet.

Add the diced jalapeño, 2 tablespoons lime juice, 1 1/2 cups sharp cheddar cheese, 2 tablespoons cilantro, and 1/2 teaspoon Tajín seasoning. Stir until mostly combined.

Fold the charred corn kernels into the cheese mixture. Spread the dip into an even layer in the skillet.

Sprinkle the remaining 1/2 cup sharp cheddar cheese evenly over the dip. Return the skillet to the grill and close the lid.

Cook for 8 to 10 minutes until the dip is hot, melted, and bubbling around the edges. Top with additional cilantro and Tajín seasoning.
