Preparation Steps
Step 1/11
Fill a small bowl with ice cold water and soak the 2 1/2 gelatine leaves until softened, about 5 minutes.
Step 2/11
Split the 2 vanilla pods lengthwise and scrape out the seeds with a parring knife.
Step 3/11
Add 200 ml whole milk, 600 ml double cream, 150 g golden caster sugar, vanilla seeds, and vanilla pods to a saucepan.
Step 4/11
Heat the milk mixture over medium-low heat until gently steaming, without allowing it to boil.
Step 5/11
Remove the saucepan from the heat and squeeze excess water from the softened gelatine leaves.
Step 6/11
Add the squeezed gelatine leaves to the hot cream mixture and whisk until completely dissolved.
Step 7/11
Strain the mixture into a heatproof bowl to remove the vanilla pods and any undissolved particles.
Step 8/11
Place the heatproof bowl over a large bowl filled with ice water and stir occasionally until the mixture has the consistency of thick pouring cream.
Step 9/11
Divide the cooled panna cotta mixture evenly among 5 panna cotta moulds.
Step 10/11
Refrigerate the filled moulds for at least 4 hours, or overnight, until fully set.
Step 11/11
Serve each chilled vanilla panna cotta with seasonal berries and biscuits.
