Preparation Steps
Step 1/12
Add the soy chunks, water, salt, and soy sauce to a saucepan.

Bring the mixture to a boil over medium-high heat.

Simmer the soy chunks until all the liquid has been absorbed or evaporated, about 10 minutes.

Peel and finely chop the onion and parsley.
Step 5/12
Transfer the cooked soy chunks to the blender with the chopped onion, ground cumin, paprika, ground coriander, ground cinnamon, and tomato paste.

Pulse the mixture 3 to 4 times until it is coarsely minced and holds together.

Transfer the soy mixture to a mixing bowl and stir in 4 to 5 tablespoons of all-purpose flour and the chopped parsley.

Mix until the dough is cohesive and can be shaped without crumbling.

Shape the mixture into 12 small oval köfte or finger-shaped cevapcici.

Heat the vegetable oil in a frying pan over medium heat.

Fry the köfte in the hot oil until golden brown on both sides, about 6 to 8 minutes total.

Serve the vegan köfte hot, optionally with vegan tzatziki.
