Preparation Steps

Preheat the oven to 200°C (400°F). Arrange 8 rectangular financier molds on a baking tray.

Place 130 g unsalted butter in a heavy-bottomed saucepan. Cook over medium heat until the milk solids turn golden brown and the butter smells nutty and toasted.

Remove the brown butter from the heat. Set it aside to cool slightly while preparing the batter.

Add 100 g icing sugar, 100 g egg whites, and 5 ml vanilla extract to a mixing bowl. Whisk until smooth and evenly combined.

Add 70 g almond flour and 35 g wheat flour to the egg-white mixture. Fold gently with a rubber spatula until no dry flour remains.

Pour the slightly cooled brown butter into the batter. Whisk until the batter is fully incorporated and glossy.

Divide the batter evenly among 8 rectangular financier molds. Top each portion with pecans.

Bake at 200°C (400°F) for 10 to 12 minutes. Remove when the financiers are golden and the edges are lightly crisp.

Cool the financiers in their molds for 5 minutes. Transfer them to a wire rack before serving.
