    Pour 1 L full-fat milk into a large saucepan. Bring it to a boil over medium heat, stirring regularly to prevent sticking.

    Simmer the milk gently until it reduces to about 250 ml, approximately one-quarter of its original volume. Stir frequently while it thickens.

    Add 200 g sweetened condensed milk and 6 saffron strands to the reduced milk. Simmer the mixture for 10 minutes.

    Stir the crushed bread crusts and 1/4 tsp ground cardamom into the simmering milk mixture. Cook slowly until the bread softens.

    Add 4 tbsp milk powder to the rabdi. Whisk thoroughly until no lumps remain.

    Stir half the pistachios and half the almonds into the rabdi, if using. Cook until the rabdi reaches a thick, pourable consistency.

    Remove the rabdi from the heat. Let it cool completely before stirring in 2 tbsp mango purée.

    Heat the ghee in a frying pan over medium heat. Fry the 4 trimmed bread slices until both sides are golden and crisp.

    Lift the fried bread slices from the ghee and drain off excess fat. Arrange the slices in a single layer on a serving platter.
