Preparation Steps

    Put the lentils in a saucepan with 750 ml salted water, cover the pot.

  2. Step 2/17

    Once the water boils, reduce the heat to medium-low.

  3. Step 3/17

    Simmer for 15-20 minutes until the lentils are cooked al-dente.

    In a large frying pan, add half the olive oil and sauté the onion over medium-high heat.

    Once they start to take on a little color, add the celery and carrot.

    Sauté for a few minutes until the vegetables soften.

    Add the garlic and spring onions.

    Add the orzo in the pan along with the remaining olive oil, spices and a little salt, stir until orzo gets heated through.

    Add the lentils along with their water, the vegetable powder, the chopped tomatoes and 500 ml of water, cover the pan.

    Simmer until orzo is cooked al-dente, adding a little water if necessary.

    Add the spinach to the pan in 2-3 batches, stir until just wilted.

    Serve immediately.

    Cover the frying pan and bring the mixture to a gentle simmer.
