Preparation Steps

Sift the gram flour into a mixing bowl to remove lumps.

Add cornflour, whole cumin seeds, salt, and baking powder to the sifted gram flour.

Add 1 tablespoon vegetable oil and gradually whisk in 1/2 to 1 cup water until a smooth, thick pourable batter forms.

Heat frying oil in a frying pan over medium heat until hot.

Drop small portions of batter into the hot oil and fry the phulkis until golden brown.

Transfer the fried phulkis to a bowl of water and soak for 20 minutes.

Gently squeeze the soaked phulkis between your palms to remove excess water, then set aside.

Whisk the plain yogurt, milk, and granulated sugar in a clean mixing bowl until the sugar dissolves.

Cover the sweet yogurt mixture and refrigerate it for 240 to 300 minutes.

Arrange the squeezed phulkis evenly in a serving dish.

Pour the chilled sweet yogurt mixture over the phulkis until they are fully covered.

Sprinkle fresh coriander, roasted ground cumin, and chaat masala over the top before serving chilled.
