Preparation Steps
Step 1/9
Finely chop the onion and mince the 2 garlic cloves.
Step 2/9
Heat 1 tbsp cooking oil in a pot over medium heat. Sauté the chopped onion and garlic until softened, about 4 to 5 minutes.

Add 2 heaped tbsp tomato paste and 1 tsp smoked paprika. Stir for 30 seconds until fragrant.

Sprinkle in 1 tbsp wheat flour. Roast it in the pot for 1 to 2 minutes while stirring continuously.

Pour in 1 tbsp soy sauce and 75 ml red wine. Scrape the bottom of the pot to loosen the browned flavor bits.

Add 90 g soy chunks and 300 ml vegetable stock. Season with 1 tsp dried thyme and salt to taste.

Stir the goulash thoroughly and bring it to a gentle simmer. Reduce the heat to low.
Step 8/9
Simmer uncovered on low heat for 45 to 60 minutes. Stir occasionally until the soy chunks are tender and the sauce is thick.
Step 9/9
Taste the goulash and adjust the salt if needed. Serve hot with cooked pasta or potatoes.
