Preparation Steps
Step 1/9
Preheat the oven to 180°C (350°F). Line an 8 x 4 inch loaf pan with parchment paper.
Step 2/9
Dissolve 2 tablespoons instant coffee powder in 1/4 cup water. Set the coffee mixture aside to cool slightly.
Step 3/9
Whisk 100 g caster sugar, 50 g brown sugar, and 100 g melted unsalted butter in a mixing bowl until combined.
Step 4/9
Whisk 70 g plain yogurt, 120 ml milk, and 1 teaspoon vanilla extract into the sugar mixture until smooth.
Step 5/9
Add 180 g all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon baking soda to the bowl. Fold gently until just combined.
Step 6/9
Fold the cooled coffee mixture into the batter until evenly incorporated.
Step 7/9
Fold 100 g chopped walnuts through the batter. Transfer the batter into the lined loaf pan and level the top.
Step 8/9
Bake for 35 to 40 minutes at 180°C (350°F). Test the center with a skewer; it is done when the skewer comes out clean.
Step 9/9
Cool the loaf in the pan for 10 minutes. Transfer it to a wire rack and cool completely before slicing.
