Preparation Steps
Step 1/14
Peel and finely shred the 3 carrots.
Step 2/14
Warm 2 cups of whole milk with the saffron in the large heavy-bottomed pan.
Step 3/14
Melt 2 tablespoons of ghee in the pan and add the mixed nuts.
Step 4/14
Roast the mixed nuts until fragrant and lightly golden, then remove them from the pan.
Step 5/14
Add the shredded carrots and the remaining ghee to the pan, then stir to coat the carrots.

Pour the saffron milk over the carrots and bring the mixture to a gentle boil.

Simmer the carrot mixture, stirring regularly, until most of the milk has evaporated.

Melt 2 tablespoons of ghee in a pan and add 1 cup of whole milk for the homemade khoya.

Stir in the milk powder and cook for 1 to 2 minutes until a thick, smooth khoya forms.

Add the brown sugar and ground cardamom to the reduced carrots, then stir until the sugar dissolves.

Stir most of the homemade khoya into the carrot mixture and cook until glossy ghee begins to release.

Transfer the halwa to a serving bowl and garnish with the roasted nuts and reserved khoya.

Serve the gajar halwa warm.
