Preparation Steps
Step 1/9
Preheat the oven to 180°C (356°F). Line the 6-inch square baking pan with parchment paper, leaving an overhang for easy removal.
Step 2/9
Halve all 12 bourbon biscuits. Arrange half of the biscuit halves in a single layer across the lined pan base.
Step 3/9
Melt the 80 g butter and 120 g chocolate together until smooth. Let the mixture cool for 2 minutes so it does not cook the eggs.
Step 4/9
Whisk the 120 g caster sugar, 50 g brown sugar, and 2 eggs in a mixing bowl until evenly combined and slightly thickened.
Step 5/9
Whisk the melted butter-chocolate mixture into the egg mixture until glossy and uniform.
Step 6/9
Add the 50 g all-purpose flour and 15 g cocoa powder. Fold just until no dry streaks remain; do not overmix.
Step 7/9
Pour the brownie batter over the biscuit base and spread it into an even layer. Place the remaining bourbon biscuit halves over the surface.
Step 8/9
Bake for 20 to 25 minutes at 180°C (356°F), until the edges are set and a skewer inserted in the center has moist crumbs attached.
Step 9/9
Cool the brownies in the pan for at least 30 minutes. Lift out using the parchment paper and cut into 9 squares before serving.
