Preparation Steps
Step 1/11
Preheat the oven to 200°C (400°F). Pierce the eggplant all over with a fork.

Bake the pierced eggplant for 20 to 25 minutes, until it is very soft and collapsed.

Cut the cooked eggplant open lengthwise. Scoop the soft flesh into a mixing bowl.

Add 1 tablespoon tahini and 1 teaspoon lemon juice to the eggplant flesh.

Season the eggplant mixture with salt. Mash with a fork until it becomes a smooth paste.

Heat 1 teaspoon cooking oil in a frying pan over medium heat. Crumble 100 g firm tofu into the pan.

Fry the tofu crumbles, stirring regularly, until lightly golden.

Add 1 teaspoon tomato paste and 1 teaspoon soy sauce to the tofu.

Add 1 teaspoon agave syrup and salt to taste. Stir-fry the tofu mixture for 5 minutes.

Spread the mashed eggplant on a serving plate. Spoon the tofu crumbles over the top.

Garnish with 1 tablespoon fresh cilantro. Serve with 1 piece of flatbread.
