Preparation Steps
Step 1/12
Peel the 2 carrots and 2 onions, then finely chop them with the 2 celery stalks.
Step 2/12
Season the 1.5 kg beef chuck roast with salt and black pepper, coating all sides evenly.
Step 3/12
Heat 3 tablespoons of extra virgin olive oil in a large heavy pot over medium-high heat. Brown the seasoned beef on every side for about 10 minutes.
Step 4/12
Add the chopped carrots, onions, and celery to the pot. Cook the vegetables for 8 minutes until softened.
Step 5/12
Pour in the 750 ml bottle of red wine. Simmer for 10 minutes to reduce the wine slightly.
Step 6/12
Stir in 130 g tomato paste and 180 g tomato passata. Coat the beef and vegetables with the tomato mixture.
Step 7/12
Add 1.25 litres of the water to the pot, keeping the remaining 750 ml for the polenta. Bring the braising liquid to a gentle simmer.
Step 8/12
Cover the pot and braise the beef over very low heat for about 150 minutes. Turn the meat once halfway through cooking.
Step 9/12
Remove the tender beef from the pot and shred it with two forks. Return the shredded beef to the sauce and simmer uncovered for 15 minutes.
Step 10/12
Bring the remaining 750 ml water to a boil in a separate pot. Add a pinch of salt to the water.
Step 11/12
Gradually whisk in the 558 g polenta. Stir continuously over low heat for about 35 minutes until smooth and creamy.
Step 12/12
Spoon the creamy polenta into 6 bowls. Top each portion with the braised beef sauce and serve hot.
