Preparation Steps
Step 1/13
Preheat the conventional oven to 130°C / 265°F using conventional static heat.
Step 2/13
Combine 40 g sweet paprika, 40 g hot paprika, 20 g ground ginger, 50 g salt, 30 g black pepper, 40 g ground sage, and 40 g ground rosemary in a mixing bowl.
Step 3/13
Coat the 3 kg pork shoulder evenly with the 120 g Dijon mustard.
Step 4/13
Rub the prepared spice mixture thoroughly over every surface of the mustard-coated pork shoulder.
Step 5/13
Place the seasoned pork shoulder uncovered in the roasting pan and roast at 130°C / 265°F for 240 min, until a firm crust forms.
Step 6/13
Pour the 750 ml beer into the roasting pan around the pork without washing off the crust.
Step 7/13
Cover the roasting pan tightly with aluminum foil and return the pork to the oven at 130°C / 265°F for 180 min.
Step 8/13
Remove the roasting pan from the oven and let the covered pork rest in the pan for 60 min.
Step 9/13
Peel and thinly slice the 3 Tropea onions.
Step 10/13
Cook the sliced Tropea onions with 50 g muscovado sugar and a pinch of salt in a saucepan over low heat until very soft and caramelized, about 30 min.
Step 11/13
Blend the cooked onions until smooth to make the onion cream.
Step 12/13
Uncover the rested pork shoulder and shred the meat finely with two forks, mixing it with the roasting juices.
Step 13/13
Serve the pulled pork warm with the Tropea onion cream.
