Preparation Steps

Preheat the oven to 200°C / 400°F using conventional top-and-bottom heat.

Wash the 3 large floury potatoes thoroughly and prick each potato several times with a fork.

Place the potatoes on a baking sheet and bake for 60 to 70 minutes, until fully tender when pierced.

Pour hot water over the vegan bacon bites and leave them to soften according to the package instructions.

Drain the softened vegan bacon bites and fry them in a hot frying pan until browned and crisp.

Remove the baked potatoes from the oven and let them cool briefly until safe to handle.

Cut each potato lengthwise and scoop the soft flesh into a mixing bowl, leaving a sturdy potato shell.

Add the vegan butter and nutritional yeast to the potato flesh, then mash and stir until creamy.

Season the potato mixture with salt and black pepper, then stir until evenly combined.

Spoon the seasoned potato filling back into the 3 hollow potato shells.

Dice the 2 to 3 pickled gherkins and finely chop the chives with kitchen scissors.
